Try this turmeric lentil soup with coconut milk recipe

What you need:
  • 2 cups of red lentils
  • 1 teaspoon of salt
  • 1 teaspoon of coconut oil
  • 1½  cups of coconut milk
  • 1 finely diced onion
  • 2 grated and cored apples
  • 1 teaspoon of turmeric powder
  • 1½  teaspoon of cinnamon
  • 1 teaspoon of cumin
  • 2-3 cups of hot water
Instructions
  1. Use cold water to wash the red lentils, and make sure that they drain properly.
  2. Grab a pot and melt the coconut oil in it. And then fry the onions, making sure they turn golden and are soft.
  3. Throw in the turmeric and apples and cook for 2 minutes, while stirring them frequently.
  4. Put in two cups of water and the lentils. Let the contents boil, cover the pot and let it simmer for fifteen minutes.
  5. Put in the coconut milk and spices, and then stir.
  6. Let the lentils simmer until soft. If you would like a thinner consistency, another cup of water will do the trick. Let it simmer for about 2 hours to get the best flavor.
  7. Serve while still warm and top it off with pumpkin seeds or coconut shavings.
